Organically farmed grapes were harvested by hand and whole bunch pressed. The juice was fermented with indigenous yeasts in a stainless-steel tank and seasoned French oak barriques. The wine was then left on its yeast lees through winter and then bottled just in time for spring. The wine smells of jasmine blossom, ruby grapefruit and freshly picked red Johnathon apples straight from the tree. Packham pears, Kumamoto oysters and beeswax fill the palate but it’s the texture that grabs your full attention.
