Predominantly ferments were inoculated with a Burgundian selection of yeast strain, with some batches allowed to ferment naturally. 9-10 months barrel maturation in 15% new French oak (60% puncheon and 40% barriques) prior to bottling. 12.8% Alc/Vol. Tasting Notes: An intensely fruited and perfumed aromatic profile combines dark cherry, raspberry, wild strawberry notes.
